Winemaking
The approach to harvest and winemaking reflected the principles applied in the previous vintage, which provides the opportunity for the vastly different seasonal conditions to be revealed in the finished wine. The grapes were handpicked at the beginning of April from a vineyard in the southerly Karridale subregion of Margaret River. A straightforward approach in the winery allowed the ferment to kick off naturally with indigenous yeast, followed by six months maturation in neutral French oak and bottling without filtration to retain the flavour, balance and elegance that had developed in the barrel.
Tasting Notes
The wine reflects honestly and transparently the essence of Sauvignon Blanc from the cool, far Southern reaches of the Margaret River appellation. The long ripening period has given succulence and citrus pulp textures which carry a long evolution of flavour driven by crunchy acidity, fresh green apple, kiwi and gooseberry characters.
